How To Make Taco Meatball Bites

INGREDIENTS

 

MEATBALLS
  • 1 large egg, lightly beaten
  • 1 lb ground beef (80/20)
  • 1 tablespoon tomato paste
  • 1⁄3 cup plain breadcrumbs
  • 2 tablespoons canned chopped chilies
  • 2 tablespoons chopped cilantro
  • 2 tablespoons taco seasoning
TOPPINGS
  • 1 cup guacamole
  • 1 cup small dice pico de gallo
  • 1 cup sour cream
  • 24 -30 corn, chip scoops
  • 2 tablespoons finely chopped cilantro
  • cheese, dip (Queso, see recipe below)
QUESO
  • 1 1⁄2 cups grated cheddar cheese
  • 1 1⁄2 cups grated Monterey jack pepper cheese
  • 1 cup milk
  • 1 tablespoon canned chopped chile
  • 1 tablespoon cornstarch

 

DIRECTIONS

Step 1

A 400-degree oven is required. Put parchment paper on a baking sheet and set it aside.

Step 2

Add ground beef, taco seasoning, tomato paste, 2 tablespoons chopped chilies, egg, breadcrumbs, and cilantro to a large bowl and combine well. Using the prepared baking sheet, form the meatballs into 2-inch balls.

Step 3

Ensure that the dish is cooked through by baking it for 15-20 minutes. Make a scoop out of corn chips and place each meatball in it. Add cheese, guacamole, pico de gallo, and chopped cilantro. Sour cream should be served on the side.

 

FOR THE QUESO:
  1. Cheese, pepper jack cheese, and cornstarch should be mixed in a large bowl. Using a medium saucepan, simmer the milk. Add cheese and chilies and whisk well. Stir frequently until thickened, about 1-2 minutes.
